He also applied to Princeton, Manhattan School of Music, Rutgers and University of Rochester. He was really looking for an "academic" music experience, so the applications to MSM and the music school at Rutgers were last minute decisions (not the way to do it!)
He decided for Yale over Princeton and MSM, because he wants the liberal arts degree (a BA, not a BM), and at this point Yale seems to beat Princeton overall in the music department. He also has numerous other interests...
Yale seems to have a LOT of opportunities for instrumentalists. For strings, there is the Symphony orchestra, and 3 of the residential colleges have their own orchestras (one is a "pops" orchestra.) There are also chamber music groups. I don't know much about winds, but I know there is a marching band and probably a wind ensemble/concert band at the very least!
That being said, I would assume that a conservatory would be the best place to totally focus on music and performance.
Good luck in your search for the right "fit" for your daughter! Is she a junior now?
