I'm fairly sure that you won't be able to fulfill the language requirement with culture classes. If you have some familiarity with Spanish but aren't very comfortable with it, why don't you just take lower level Spanish? This might be the 1/2 a doctor in me speaking, but it will never NOT be useful to know Spanish. If you do want to try something new, Yiddish is offered by the German department. There's also French, Italian, Russian, Arabic, Chinese, Hebrew...
