Chances...+ a question about majors.

So i know my SAT scores aren't sky high...but im hoping that my essays and ECs will make up for them. I have already started working on my essays and I had one of my favorite teachers read and critique it. He liked it a lot and thought it embodied me well.
How much would applying ED be advantageous for me?

Another question.....is there any way to create my own major at vanderbilt?
I am interested in public health and as of now i want to double major in Medicine, Health, and Society Major and Cognitive/Neuroscience.
However, if there was a way to create my own internation/global health major that would be pretty cool too....gives me another option.

I want to be a doctor and my essay is about why I want to help people throughout the word....the life changing experience one(what prompted me to want to become a doctor)...but as I was thinking about it...i don't have many ECs that pertain to health simply because there really aren't any here in boise. will this be bad for me?
I guess i do have a lot of helping/teaching children...that could be kind of pertinent. BUt honestly I didn't want to volunteer at a hospital and serve food...that has nothing to do with what I want...even though it is at a hospital.
The cancer research kinda goes with it i suppose...

ECs...main ones:
volunteer at science center/museum. Help teach kids science classes. 400 hours
I am part of the teen club at the museum and I am the treasurer. We qualified for the Team American Rocketry Challenge Nationals. Sadly placed 60th but it was out of 800. so that isnt too bad.

volunteer during summer to teach inner city youth sailing in san francisco.
(400 hours)

Play in quartet for community functions for free(200+ hours)

Cancer research in Boise State University biochem lab (5-10 hours/week)

Played violin for 11 years
Orchestra/Honor Orchestra/Chamber Orchestra all competitive to get into.
AMIS International Honors Orchestra (Beijing China)



Varsity Rugby
Varsity Swimming
Varsity tennis at my old school.....JV tennis at my new one.
I am way more into sports like biking and sailing where there arent many teams
