It's very unlikely that you'll be able to do a co-op without summer school, unless you want to go through an extra semester of school.

Japanese is an incredible amount of time commitment for people who did not grow up with East Asian languages. Trust me, you'll spend hours and hours studying the vocabulary after class, nevermind the grammar, the writing, and other things.

Oh, and if you take Japanese, you will forever be labeled a weeabo. Not that bad in engineering... but it annoys a lot of people.
