I just took a look at the Canon and Nikon sites and the only engineering job I saw there was for a software engineer. Have a look at their sites for employment opportunities in the US, if that's where you want to work. I'd think EE/Computer Engineer/Software engineer would be best.
I always thought designing lenses would be the perfect job...
