Taking AP classes doesn't show your love of learning. At all.
I would suggest a good essay, getting involved in some tutoring effort in a setting that is OUTSIDE the school.
Its great to say you love learning when it occurs in the building you're forced to go to every day for 8 hours but it really doesn't mean much on its own. Find ways/activities to show learning outside of the school setting.
