For the supplementary essay, is it okay if I praise the Jewish religion, history, and customs, and discuss how I want to challenge myself in a different new environment? Will they feel offended and then reject me because of it?
I don't think "praise" of Judiasm is going to win you any points. But if you discuss the aspects of the Jewish religion, history and/or culture that intrigue you, it might make for a compelling essay.
1. I want to hang around with some Jewish people, so that's why I want to go to Brandeis.
or
2. I want to take some Jewish Studies classes, and Brandeis has a world-class department in this area.
If it's the former, I'd leave it out. If it's the latter, I'd mention it.
