With the CalTech supplement short answers and the summer activity section, are we expected to write them like a short essay, or just to answer the question?

For the three adjectives and books, you don't need to do more than list them. For the summer activities, list them and add a brief description if the admissions committee wouldn't likely be familiar it. For the ethical dilemma and "what do you do for fun" short answers, write a concise paragraph. I'd hesitate to call them essays because that sometimes implies the use of flowery language, which you should certainly avoid.
