I took History of Urban America with Jared Day and he was a pretty good professor. I know a bunch of people in the class had had him for another course or two, so he teaches a few different things. I'd say the class was definitely the easiest A I earned at CMU, but he was pretty good at teaching, so I enjoyed it.
I don't know of any real BEST CLASS EVER type of classes at CMU since I think they all take a fairly decent amount of work, so just try to take things which you think will be interesting. It might be worth taking a look at what StuCos are being offered, too.
