Does it matter which SAT 2's I take?

Let's say I sign up for 3 SAT 2's for November: Math, Bio, and Physics. Then I change my mind and want to instead take Math and US History. Can I take whatever SAT 2 and how many SAT 2s (up to 3) I want on the day of? Will college board/colleges penalize me for the discrepancy between what I picked and what I actually take? Or will they not care?
