Which Community College class will look best?

This fall, I'm planning on taking one of the following community college classes after school hours:

Anthropology
or
Intro to Law
or
Business Law

So far at the community college I have a 4.0 GPA, and have taken Advanced Web Authoring, Geography, and Statistics.

Which of these classes would look the best to an admissions officer from a school like Carnegie Mellon, Webb, or Worcester Polytechnic?

Also, which would probably transfer best for an engineering major?

Another choice I forgot to mention is Computer Aided Civil Engineering. But that is a couple more hours a week, and I'm already taking 3 AP classes that semester.

If 2 community college classes are each 3 credit hours, will they care for admissions purposes what the class is?

I mean, does Civil Engineering look better or worse than Anthropology or Law or anything???
