SAT in November, SAT II in December. Will it work?

I am applying to UC's probably. I am taking the November SAT and the SAT II in December. Problem is that UC's application deadline is in Nov.

Someone told me I can write on my app. that I am in the process of taking them and they'll get my scores later. Is that true?

How exactly does it work?
