Switching

I am a senior this year, and I am not sure what I want to major in. I am trying to decide between finance, environmental engineering, and environmental science/studies. I plan on going to a university that has good programs in each area. I think the best way to decide what I would like to major in is to take classes in each subject. Should I apply as undecided? Should I apply for the engineering school and transfer out if I don't like it since it is probably the hardest one to transfer into? Thanks for any help you all can provide.
