teacher rec letter issue

I asked 3 teachers for a rec letter so that I could choose the best ones out of it. I know I'm handing one of them for sure, but I'm having a problem choosing between the other two. One of them is from my AP Calculus teacher, and from what I hear, her rec letters are pretty generic and unspecific. It's just not something that would impress the admission officers. The other one is from a teacher I've known for the past two years from extracurricular activities, but the problem is, I haven't taken any of his classes. I heard his rec letters are really good, probably much better than my math teacher's. He writes specific stuff that he saw/experienced with the student, and I'm sure it's going to be more helpful for the admission officers to get an idea of what kind of student I am.

Which one should I be using for my apps?

Agree with zombie. My math teacher's rec sucked! I kind of hate her for it... Lol. Don't make my mistake.

Two Teacher Evaluations: These forms should be completed and submitted by teachers who have instructed you in solid academic areas (English, mathematics, language, science or social sciences). Additional recommendations may be submitted if you wish.

The wording makes it sound like I shouldn't be using one from a teacher that hasn't taught me..

A teacher that hasn't taught you shouldn't be one of the 2 required letters. Send that one as an additional letter. Plus, he'll obviously be talking about stuff your teachers won't have mentioned in their letters.
