Can someone explain how or when this number gets updated. My post count doesn't seem to change.

Is this what drives the categories of junior member, member and senior member?

I had a similar question and I posted it in the Cafe. Basically, the high school life and cafe sub-forums don't count towards your post count.

Try posting in the main sections of the site, and you'll see some results.
