A focused undergrad degree like that one is always a bit risky. Granted, I think there will likely be jobs available by the time you graduate, but nobody really knows for sure what the future holds for robotics work.
A better idea, I believe, would be to go for your ME degree with a minor in robotics, or at the very least, take a few robotics courses as tech electives. Then, if you find that the demand is high enough after graduation, start working for a couple years and go for a Master's in robotics.
