number of professors to talk about in SOP

I'm applying to a chemE M.S. program, and for most of the schools I have 2 professors I could potentially talk about to convince them that I "fit" in their university.

But mentioning 2 seems to make my statement of purpose flow awkwardly. I would PREFER to talk about just one, because there's always one that just sounds way more appealing than the other.

So, to sum it up: Is talking about one professor in my SOP enough? Or do I need more?
