I am applying EA to MIT.

Do I need to complete the CSS Profile now or not until later?

The CSS Profile is very annoying... feels like CB is just leeching money out of us AGAIN. It costs so much to send!

Not until later -- financial aid forms will be due in mid-February. (Your parents often can't fill out these forms until they get this year's tax information sometime in January.)

Still, it's never a bad idea to start as soon as you/your parents are able. Deadlines have a way of sneaking up on you.

Note that this is not true for many other schools - Caltech, for example, requires the CSS by November 15th for EA applicants.
