Does NYU require all scores from all test dates to be sent or can I send the best dates and the highest sections will be superscored?

Send all your testing, they will superscore!

Send each test date that has a highest score in each category. If you did your best in all 3 sections in 1 sitting, just send that sitting. If you did your best Math in June, best Reading in September, and your best Writing in November, send each test. But, for example, you did your best R and W in October, and best M in November, you would only want to send Oct and Nov, not any other sittings.

They will superscore, meaning they take best score you got on a section of all sittings you send.
