So... if i declared a tentative major that was a very popular one...
would i have a disadvantage in admissions?

No. Most people change majors once or twice during their college career anyway.

The one thing about admissions is this: because of the size of the school and the unlimited nature of many of the majors, it's slightly easier to get accepted to Weinburg (the general school of Arts and Sciences) than it is to get accepted to another school, such as Communication (largely because they need to limit the number of people they accept for many majors in this school). However, if you are interested in a program in another school, apply there, because you can always transfer INTO Weinburg if your interests change, but it's pretty hard to transfer OUT. Also, Weinburgers can only really double major within their own school. For example, a Theatre major in the school of Communications can double major in English but an English major cannot double major in Theatre.

I hope that wasn't too confusing...
