They administer medicines that knock people out during surgery, or local anesthestic for less intensive surgeries.

In addition to MD anesthesiologists, there are also Nurse anesthesiologists, which requires extra training beyond nursing school.

Anesthesiologists are very high paid doctors that administer anesthesia to patients. To become a nurse anesthetist you need to have one year experience in the ER or OR after undergrad and then two more years of school after that. They are the highest paid type of nurse out there.
