We made chili one time with a can or two of Rotel 'extra hot' diced tomatoes and chilies added...big mistake. It was way too hot and we had to throw it away. When I ate some of the chili, it was so hot that I couldn't get my nose to stop dripping and my stomach felt like I had a fire in it! I use 'mild' chilies now when making chili.

My Mahi Mahi dinner was not a hit. I tried a recipe a friend gave me that she raved about, but it was just OK. It was very much like Chicken Francese, my husband complained it needed rice or pasta, but we don't do carbs for dinner. Oh well, tomorrow's another day.

Leftover black bean quinoa salad and dal. DH is traveling and I'm getting ready to leave on a trip tomorrow. Trying to clean out the fridge and not throw too much away.

I didn't even make this stuff hot! Put in 3/4 teaspoon of cumin and 1 tablespoon of chili pepper for an entire crock pot full of stuff.
I am such a wuss.

I did not make the tacos with the mahi mahi. Too lazy. So instead I made brown rice (Lundberg organic brown basmati is the best I've found) in half low-sodium chicken browth. A salad with a little feta. The fire roasted frozen vegetables from Costco. And simply grilled the mahi mahi stove top with a squeeze of fresh lime, a little S&P. It was a tasty and healthy dinner. My DH really liked it. So did the dog.
Not sure about tonight . . .

My D was telling me about a movie or a show where the female is really ditzy. She tells a waiter "I'll have the mahi mahi, but I'm not that hungry, so can I just have one mahi?" |

im going to make pot roast with veggies tonight.
i could easily be a vegetarian, but not H, and we have been eating things like toasted cheese sandwiches with tomato soup for dinner lately so i thought i would give him a treat ( besides the Halloween candy he has been sneaking).
I usually dont have much of a recipe, just brown it and make gravy out of broth, red wine & coffee, along with a bay leaf and some cloves. Today veggies are spanish onion, carrots, parsnips & yukon potatoes. i may cook up some of my less attractive tomatoes too.

^ Board has been wacky again.
It's gray and damp out so a good night for chili - and the hotter the better in my house.  I've got one bag of Caesar salad left from when DS was here with his mates and it's probably close to expiration date so that will be our side.

Lazy again tonight. Marinara from a jar (I like Barilla) with spaghetti and Trader Joe's turkey meatballs. A whole bunch of blanched fresh spinach, cooked for just a few minutes stovetop in olive oil, garlic and a bit of butter. Salad with olives and feta and really good tomatoes from my brilliant gardener friend. No bread!
