Sautéed chantrelles (from the Olympic National Forest), with garlic, lemon juice, and parsley, on toasted baguette. And a glass of white wine. Can't forget the wine. Such are the meals when my H is out of town...a true empty nest.

I want to find a good recipe for beef w/barley soup.

Pamela's gluten free pancakes. H went out for a dinner and movie with S. I don't know why but I have been having a craving for pancakes. They were delicious.

Tonight I made this:

Curried Chicken Thighs Recipe : : Recipes : Food Network

Modified it a little: +green and red pepper, -carrots, -peas, -cream.

I would also use some corn starch to thicken it up a bit.

Just had a snack plate tonight while I watched "Magic Mike". Cheese, crackers, almonds, sliced apple, cottage cheese and apple butter. And Verdi wine.

Grilled out all weekend because the weather was fantastic! Now the temp has dropped 20+ degrees since this morning and it's rainy and windy....

Tonight - pork roast and homemade mac and cheese with a couple sides of veggies - probably some savoy cabbage I picked up. Although some homemade applesauce sounds good too!

Just finished Shrimp Scampi made with lots of fresh garlic, Lemon juice, chopped spinach and chopped tomatoes over low carb linguini. Sauteed Broccoli and carrots on the side.

Happy Diwali (yesterday) and HAPPY NEW YEAR today- in India according to the Hindu calendar. MIL with us for a few weeks so we feasted on home cooked goodies for supper. Chana dal (split chickpeas) with doodhi (a summer squash), fried cabbage (a misnomer considering the less than tsp of oil used), basmati rice, puris, papads, a sweet concoction. Vegetarian meals can be flavorful and not too spicy if I am in charge.

We had Pepper Steak, rice for me and egg noodles for DH. IDK what I did wrong (except didn't give it the attention it needed bc I was multi-tasking DS7''s homework and cleaning after Tae Kwon Do) but it was kind of bland.

Does anyone have a good large recipe for sweet potatoes? Thanksgiving is at my house this year. There will be either 16 or 21 to feed. But here are my rules (because all these people are STAYING here as well and I have to feed them other meals, AND my dishwasher is broken and the part won't arrive until after Thanksgiving): (1) I would like something that uses canned sweet potatoes to make it easy on me, and (2) they must be mashed and topped with marshmallows because that is what everyone likes. Sooooooo, any recipes???

Now, about that broken dishwasher. The minute I whined about it, I could just imagine my 16-year-old saying "First World problems, Mom", so shame on me for complaining!
