I am definitely of the floater persuasion.
I'm working with a homeschooling family that is spending time doing "Matzoball Math" with their 8-year-old. Radius, circumference, diameter, area, volume - before and after cooking - weight, before and after; base 16 (converting ounces to pounds); calorie measurement; cooking time covered and uncovered (that one isn't my idea - cooking them uncovered makes 'em tough).
Matzoh balls symbolize the rocks used in David's slingshot, or the balls used in Joshua's cannons when attacking the walls of Jericho. They can also be seen as a symbol of virility.

Matzoh balls can also remind us of the time we spent as slaves in Egypt, and used to break our teeth on the food. Alternatively, they can remind of us of heavenly ascent, and the Moshiach to come, trailing a storm of matzoh balls behind him.
Good Yom Tov!
