I received a few scholarships during my senior year, and I also qualified for financial aid. According to Princeton's policy, the scholarships would take away from the financial aid, so the total amount of "aid" I would be getting remains the same. The Princeton SCI site says I can purchase a computer with the grant money so not all the scholarship money goes to waste, but are there other ways of spending it?
No, the scholarships will be used first to cut workstudy, and then you can use it I think once in the four years for a new computer. It may also be possible to use it to replace some summer earnings, although they are pretty willing to cover that for you if you don't have a job that earns you enough money (think community service or working for a non-profit) and if you have a job then they'd expect the money.
