Check rules of each college that requires you to send "all scores." Their actual rules vary and a number which require all SAT scores do not require all SAT subject test scores, while others do. As to learning whether you sent all scores, you are of course expected to comply with the colleges' rule but the two ways they have of learning what you have done is for you to tell them, such as listing scores on your application and then sending them all, or your high school tells them -- many high schools put all your scores on the official high school transcript that is sent to colleges.
