Easiest SAT administration

When is the best time to take the SAT? When is the curve in your favor (for relatively high achieving students)? Is it just hit or miss when it comes to the difficulty of the sections? I took it may 3rd and i thought that reading was average, math was difficult, and writing was easy. This is compared to past SATs I have taken as practice tests. For example, I felt like the math was more difficult than in january. From what I am hearing however, the math was considered generally pretty easy for the may 3rd test. I'm nervous because I feel like I flubbed it and the curve will definitely not be in my favor. It seems like SAT math is hit or miss with me: I either get lucky or I don't in terms of what problems "click". One solution, of course, would be to prepare more, but I was still wondering if anyone had any insight into when the best time to take again would be in order to bring my math score up. I expect it to be low to mid 600s for test I just took, but I would love to be able to break 700.
