Takin BOTH Math IC and IIC
Is it any good?
Harvard and Princeton requires 3 SAT tests,
but I've only taken U.S History yet,
and I am preparing for Math IIC next month.
Would it count as three?

You can kiss Harvard and Princeton goodbye if you do that. Seriously, all of Math I is covered in Math II. There is no point in taking both.
