If I learn everything that's on there and I get 700s on the online tests about how much would I get on the real sat subject test? I mean are the sparknotes tests accurate?

I would say you should do pretty well.
I took the Sparknotes practice tests, and got scores ranging from 650-680.

My actual score on the Bio M was a 740, quite a bit higher then my practice.

So I would say that Sparknotes is actually a bit harder then the test itself, and that you should be fine.
