Which SAT IIs?

If I'm applying to these schools:

MIT
University of Notre Dame
Rice
Stanford

Do I need to/should I take a non-Math/non-Science SAT II? I plan on majoring in Aerospace Engineering....none of these schools will care if I just take the Math II, Physics, and Chemistry subject tests, will they?

Math level 2 and a science are required for M.I.T.

which is the easiest science if you haven't taken Physics (in AP now) or had Chemistry sophomore year, Biol freshman year>?
