Siam Square on pleasant street, I think... is a great place to to dine!!! IF you love Thai food or want to try Thai food you should consider stopping by. They have great tasty food that's really fresh and best of all, it's cheap! Hope you guys enjoy your time in Nothampton!
I just got back from a 3-day trip to Northampton, and this thread was so useful, so thank you, all! While there my dad and I had dinner at the Teapot (Chinese/Japanese), Thai Garden, and India House. Coming from NYC, I was very pleasantly surprised at the diversity and quality of Noho food. I really loved the Thai Garden in particular; the food, ambiance, and service were exceptional.
The Rt 9 diner (catchy name) is on Rt 9 a mile before Amherst College
I know it's too late for advice for move-in, but just a comment on the Route 9 Diner. You are correct that Miss Flo's is on Route 9 going West not East and there is a diner in Amherst on Route 9 east of campus in Amherst. But the Route 9 Diner has horrendously bad food. Not recommended at all.
Agreed on the Route 9, it's only acceptable as a stopping point for your designated driver when all the drunk passengers require a milkshake like, right now!

GO TO THE HAYMARKET! It is delicious and CHEAP. Teapot has decent Japanese/Chinese stuff and is pretty inexpensive. Osaka is probably better but it costs some serious $$$. Don't forget to go to Herrell's!
