On the “Intellectual experience or idea” essay, are you supposed to talk about an idea or experience that you’ve gone through or are you supposed to talk about an experience that is still going on? Is it acceptable if I wrote my essay on my first dissection back in 9th grade?

it really is open-ended; the dissection idea would be a good one, imo, and would definately be acceptable.
