Are all admitted students enrolled as undeclared?

I am the class of 2012 of Stanford. I remember on Stanford's college application, there was nowhere where we declared our major. Maybe I missed something? Because I wanted to declare my major as Human Biology but I saw nowhere where we could declare our major. So I just assumed that Stanford enrolls everyone as undeclared? Am I wrong?

You don't need to declare until the end of your sophomore year, and some departments might not even let you declare until you've taken some classes. I declared History at the end of my Frosh year, but I already had an advisor in the department that I was really close with. Its probably best to wait until you know who you want your advisor to be.

yes, we are undeclared, and in fact have a "hold" on us in axess...we can't sign up for classes till NSO (can't wait for that!!!)

Every incoming frosh is undeclared. Declaring immediately is somewhat discouraged, as they want you to explore at first and try classes in different departments.
