Chances of UCONN

Yes I'm going to be another one to ask

Stats:
GPA: 3.0/4.0 (yes low but there are circumstances that surround the low GPA in Freshman year that counselor is responding)
SAT: 1600/2400
Class Rank: Top 25%
AP Classes: 10 Classes Total (throughout High School / have accumulated at least a B in every class)
Honors/Gifted: A lot of honors classes
Senior Advanced Classes:
AP English, AP Economics, AP Government, AP Biology, AP Statistics

Extra Currics:

President - Young Republicans
Creator - TOMS Shoes Campus Club
President/ Lead Lawyer - Mock Trial
National Art Honor Society
Model United Nations
United Way Volunteer/Intern
Symphonic Orchestra (been playing for about 8 years)
Volunteer for a Mentoring Foundation
Creator of a Mentoring Foundation at School
Honors program for Minority Students
Environmental Science Club

Been to a few summer programs:
JSA Summer Session at Yale
Georgetown Law & Society Class

and a few other extra cur. thrown in there.

So everyone, what are my chances?

By the way, I have great letters of recommendations from teachers and united way and a killer essay.

I should also mention, I'm OOS and applying to the main campus.

I plan to have all of my application materials in within the next few weeks.

I'm also first generation college student from a single parent.

I would say you're right on the line. If you're applying, I would recommend doing so Early Action, which is non-binding. You may be ok, though, because of the AP classes.

I actually will have all of my application materials into there by the beginning of next week (they should be on campus by then).

I also am submitting recs from my counselor and a non profit that I interned for, does that improve my chances?

Admissions likes to see recommendations from people who really know you, not necessarily people of "high stature." That being said, if these people know you very well as a person, then that will always improve your chances (provided they give GOOD recommendations, of course).
