Do LSA students HAVE TO take non-LSA courses

Must all LSA students take 20 credits of non-LSA courses or is that just an option? If it's a requirement, does that mean I get to take courses from Engineering, Ross, Education schools?

I really don't know where you read that, but it's definitely not a requirement. The vast majority of LSA students probably take no classes outside of LSA because it requires an override and other stuff to do so in the first place.
