@njpatane19: I am not disagreeing with your point, but I think the OP meant to say that "admissions people don't really care about non-academics," which is true to an extent. Yes, having extra-curricular and other perks certainly will not hinder your chances, but comparatively, GPA and standardized test scores account for probably at least 70% for making a decision.
To the OP: Yes you would have great chances at any of the colleges at the U.
