Do honors. I've heard the courses were actually easier/better than non-honors (probably because of the no-set-curve thing for UHC classes). Also if you took AP Bio and do regular Bio you will be bored out of your mind. UHC Bio will probably prepare you even better for your MCAT (and it'll look better on your transcript!)
