So, what happens to the courses I took that are not required by this major

I am currently under General Studies major, but took two business courses.. however, I may consider something in healthcare which I saw in a program evaluation that the business courses I took won't be qualified. That's understandable.. but do they at least work towards increasing my gpa?

Yes, they still count toward your GPA. You may want to talk to your advisor to make sure, but I can't imagine any course not counting toward GPA just because it's not your major or minor.

Thank you! That's great to know at least it will count towards my gpa, since I needed the boost even if they won't count towards my future major.
