Do college professors check their university email accounts during the summer (economics professors in particular)?

    I'm almost certain they do

Usually, but they probably won't respond as quickly as they do during the school year unless they are teaching summer courses. One of my profs went to a lot of conferences in various states over the summer and didn't always have internet connection, so depending on their plans they may take time to get back to you.

Unless they're an adjunct being a professor is a full-time, year-round position. Summers are generally the best time of year since there aren't any classes to deal with and research work can get done.
