I haven't seen anything about the political science program at McGill. Does anyone know anything about it?

I'm a current u1 poli sci student at mcgill (skipped u0 tho). You can find lots of info on the mcgill website (all the course syllabi are on there too). Poli sci at mcgill is split in four sub disciplines: canadian politics, IR, comparative politics, political theory. The number of courses you take within each subfield depends or whether you are honours or not (you do have to take one political theory course regardless, but i know people who won't take canadian politics courses). To do honours you also need to take two research methods in poli sci courses. It's def one of the biggest departments at mcgill, so all the intro classes i've taken so far are 150+ people.
