I have been volunteering for a soccer club in my community, and I was wondering if I need the coach to sign anything to prove that I earned those hours.

Usually the coach will need to sign something to verify. Check with your school, though; because they might have a form they want you to use.

Or they might have an entirely different method, but I've only ever had to get a signature.
