what to do during your "gap year" before college

I hope to defer my undergraduate college to take some time off and follow my passions. What would you recommend doing before starting my pre-medical concentration? I'm thinking about Americorp, taking some EMT training courses, volunteering, working, etc.? What has been your experience and recommendation?

Thank you

I am in my gap year right now actually :)
I did several volunteer work like ,Project Manager for Junior Achievement, Delegation Liaison Officer for 12th Special Olympics World Summer Games, Teacher of an elementary school in mountainous areas of China. Besides I "follow my passion" and go to hiking, do some reading~
