Question on internships/jobs/experience acquirement

Right now I'm a freshman in my first semester, and I wanted to do some extracurriculars. However, if I were to do something extracurricular I would want it to be career-oriented. The problem is, I'm not sure what I want to do for a career. I mean, I have it narrowed down to a couple fields but they're kind of disparate. So what should I do? In addition, how do I know if a certain internship/job I'm looking at is quote unquote top notch or will look well on future job apps or will provide me with good experience?
