What is the best school I could get into for economics and a career in Investment Banking?

Okay so a while back I had posted in the general discussion about what my chances are for a few UCs that I was interested in bu I've decided I likely wouldn't be able to afford the out-of-state costs. So right now I want to know based off of my stats, what my best options are for a major in Economics and minor in finance for a career in investment banking/private equity/hedge funds. My top options that I've thought of are University of Florida because it's in state and NYU Stern because of it's prestige and location.

Grades: (calculated at end of of first semester junior year, second semester had straight A's so should go up a little)

UW GPA: 3.7
W GPA: 4.15

Test Scores:

SAT: 2020 (Reading: 680 Math: 650 Writing: 690)
ACT: 29 (first time, probably taking again in fall going for 31+)

Classes

AP Environmental Science 4, AP Human Geography 5, AP Lang will find out this summer (expacting a 4 or 5)
took 3 consecutive years of Spanish
All honors, AP, or Dual enrollment
Will graduate high school with A.A. Degree

Senior schedule (early admissions/full time dual enrollment)

General Chem w/ lab
Speech
Western Civilizations 2
Humanities
Statistics

Extracurriculars:

Founded the school's surf team/club in 8th grade
I compete around the state regularly and around the country annually through ESA and NSSA (surf competitions)

I think some of my weaknesses are leadership positions, not super high test scores and only 3 AP's.

    One of my dad's friends is in investment banking and when he worked for Bank of America, his 3 favorite schools to recruit from were university of Chicago, Stanford, and Georgetown
