"Only one year of foreign language.'

Check the school website for each of your schools and make sure there is not a foreign language requirement for applicants (example from Davidson follows). Most highly competitive schools require 2 or 3 years of a foreign language and you will be competing against kids with 4 plus years. Also, consider checking to see if calculus is an expectation.

The following are required for admission to Davidson College:

Applicants must complete secondary school graduation requirements before enrolling at Davidson.

Excluding consideration for exceptional circumstances, at least 16 high school units are required, although the average student accepted at Davidson has taken 20 units. These units should include the following: 4 units of English, 3 units of mathematics, 2 units of the same foreign language, 2 units of science, and 2 units of history/social studies. It is strongly recommended that high school students continue for the third and fourth years in science and in the same foreign language, continue mathematics through calculus, and take additional courses in history.
