ooh well I thought hard about applying to one of those schools for environmental related things and although the Princeton Review will tell you that Montana State is the better school, ultimately I decided and just did apply to the University of Montana. The truth is I'm from Vermont and have never been to Montana though I like Missoula's location better and their outdoor recreation management program.
They're both good schools for the programs you're looking into, though the upside of the University of Montana is that the geography, geology, and environmental science programs are all in the same school, while at Montana State the environmental science program is in a different college than geology, and geography.
