As her Sats stand she has really no chance at HYP and a very slim chance at tufts the rest i dont really know too much about

Yeah, she REALLY needs to get her SATs up into about the mid 2200s to stand a chance at HYP. Also, she needs to take 3 SAT IIs to apply to Princeton (not sure about Harvard though).

In at Denison - probably with good money.

Another thing I noticed is that she has a long list of ECs, but for the majority of them, she's only participated for 1 or 2 years. Are these stats she's accumulated as of now, or are they what she will have at the time of application? (I'm assuming that they're what she will have at the time of application, since you put four years for crew.) The fact that she doesn't have very longterm commitment could hurt her. Also, is there one thing that she's truly passionate about? Her EC list is pretty diverse.

From what I can see your EC's are good, grades are great, and your testing scores, especially the ACT, are respectable as well. It may be difficult to get into some of they top ivy league schools, however you have a good chance. There is no point in not trying...
