How can I improve my application with limited EC's?

I really don't have that many EC's, except for 300 hours at my local volunteer ambulance corps, the science olympiad team for two years, volunteering at the school library for two years, and participating in Junior Achievement. Is there any other way I can make my application stand out to make it look better? My grades and test scores are pretty high, so I'm not worried about that. I'm really interested in applying to Columbia University and Sophie Davis. Any way I can make myself more appealing to them? Thanks!
