<p>You guys are making feel like such a chump…I never make brownies from scratch…cut it out!!</p>
<p>dke, the recipe I posted is soooooo easy! Mix everything in the one saucepan, so easy clean-up, too, and if you like rich, very moist brownies, more fudgy than cakey, you’ll probably like these. And easy. Have I mentioned that? Also easy clean-up, in case I haven’t mentioned that before. :D</p>
<p>I often replace the vanilla extract with almond extract; one of these days, I’ll get coffee extract and hazelnut extract to try in these, too. (Mint didn’t work very well…)</p>

<p>This is sort of off topic but made me think…at the preschool center where I work, homemade goods of any kind are strictly prohibited by state health regulations. So when a classroom is having a celebration (holiday or birthday), the goodies the Moms send in must be store bought and sealed in unopened packaging. If they send in home baked goods we are not allowed to serve them to the kids at all. We politely send them back home and explain that we could not use them due to regulations. </p>
<p>I guess with all the weirdness (plus infectious diseases) in the world today, we now have to take extreme measures. So if a stranger came to your door (which is essentially what a visiting student is) and offered you homemade food would you feel comfortable eating it?<br>
Just “food for thought”. </p>

<p>If a student were visting me – unlikely, since I’m ancient – and brought me homemade food, yes, I’d eat it. Of course, I’m likely to offer that student some of it as we sit chatting, too! :D</p>
<p>My favorite frosting is melt a bag of chocolate chips in your microwave. Stir in a cup of whip cream. Cool. If you get impatient with the cooling (or you like it sweeter) you can thicken it with some powdered sugar.</p>
<p>I wouldn’t hesitate to eat what a visiting student brought. (Assuming it wasn’t something like meat that needs refrigeration.) Thankfully our elementary school never forbade homemade cupcakes, though the nutrition police are trying to make sure all snacks are healthy.</p>
