This is a good question. For a non STEM-focused applicant, it is very unlikely either choice would make a difference. As a senior, all of the colleges are going to see is maybe a first quarter grade (EA / ED) or one semester. And even if your dream school doesn’t set quotas on majors, I would disagree that prospective majors are not considered in admission unless your coursework is very broad and without a single area of focus. If colleges see your arrow pointing to the humanities or social sciences, your math selection will be less scrutinized than - say - someone whose “thing” is computer science or engineering.
For life, I’d have to think Stats would be a lot more useful. In terms of Calculus, AB is already somewhat less rigorous than BC, so it’s hard for me to see that being a strong statement of math rigor, and to take AB just to make that point seems like a unnecessary way to load up what otherwise might be a beautiful senior year post-admission for you.
